Crust
Prepare the pie crust by combining the all-purpose flour, granulated sugar, and salt in a large bowl. Cut in the cold unsalted butter cubes using a pastry cutter or fingertips until the mixture resembles coarse crumbs with pea-sized pieces.

Gradually add the ice cold water, stirring just until the dough starts to come together. Divide the dough into two equal portions, flatten each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour before rolling out.

For the filling, combine the sliced apples with chopped walnuts, brown sugar, maple syrup, allspice, cinnamon, nutmeg, salt, cornstarch, and fresh lemon juice in a large bowl. Toss well to coat all the apples evenly.

Preheat the oven to 375°F (190°C). Roll out one disk of chilled dough on a lightly floured surface into a 12-inch circle and fit it into a 9-inch pie plate. Trim the edges, leaving about an inch overhang.

Roll out the second disk of dough into a 12-inch circle. Cut into 1/2-inch wide strips. Weave the strips over the filling to create a lattice pattern. Trim and seal the edges by folding the overhang from the bottom crust over the lattice and pressing to seal.

Use tart apples like Granny Smith for balanced sweetness and acidity. Chill the dough well to achieve a flaky crust. Cover pie edges with foil halfway through baking to prevent over-browning. Let the pie cool at least 2 hours before slicing to allow the filling to set properly.
Saving it for later
Store any leftover apple pie tightly wrapped in plastic wrap or covered with foil at room temperature for up to 2 days. For longer storage, refrigerate leftovers in an airtight container and consume within 3-4 days. The crust may lose some crispness when refrigerated.
Reheating
Reheat leftovers to 165°F (74°C) in a preheated oven at 350°F (175°C) for 15-20 minutes to restore warmth and crisp the crust slightly.
