Ingredients

Let’s make it
Heat olive oil in a large pot over medium heat until shimmering.
Add the Italian sausage to the pot. Break it up with a wooden spoon and cook until browned and cooked through, about 6–8 minutes.
Add the diced onion and minced garlic to the pot with the sausage. Sauté until onions are translucent, about 4 minutes.
Add the diced potatoes, chopped cabbage, chicken broth, dried thyme, and bay leaf to the pot. Stir to combine.
Bring the soup to a boil, then reduce heat to low and simmer uncovered for 25–30 minutes, or until potatoes are tender and cabbage is softened.
Remove the bay leaf. Season the soup with salt and black pepper to taste. Stir well and adjust seasoning if needed.
Ladle the soup into bowls and serve hot, optionally with crusty bread for dipping.
Tips & notes
Use mild or spicy Italian sausage according to your preference. For quicker cooking, dice potatoes small and shred cabbage finely. Adding a splash of apple cider vinegar at the end brightens the flavors.
Saving it for later
Store leftover soup in an airtight container in the refrigerator for up to 4 days. Reheat on the stovetop or microwave until hot throughout.
Reheating
Gently reheat soup over medium-low heat on the stovetop, stirring occasionally. Add a splash of water or broth if soup has thickened. Heat until steaming hot, about 5–8 minutes.
