Let’s make it
Preheat the oven to 190°C (375°F). Grease a 9x13 inch (23x33 cm) baking dish with butter or cooking spray.
Place the peeled and chunked potatoes into a large pot. Cover with cold water and add a pinch of salt. Bring to a boil over high heat, then reduce heat to medium and simmer for 15-20 minutes or until potatoes are tender when pierced with a fork.
Drain the cooked potatoes well and return them to the pot. Add butter and warmed milk. Mash until smooth and creamy. Season with salt, black pepper, and garlic powder if using. Stir well to combine.
Transfer the mashed potatoes to the prepared baking dish and spread evenly. Sprinkle the shredded cheddar cheese and grated Parmesan cheese evenly over the top.
Bake uncovered in the preheated oven for 25-30 minutes until the cheese topping is melted, bubbly, and golden brown.
Remove from the oven and let cool for 5 minutes before serving. Serve warm as a delicious side dish.
Tips & notes
Use warm milk to help create a creamier mashed potato texture. For a richer flavor, substitute some milk with cream. Be sure to drain potatoes well to avoid watery mash.
Saving it for later
Store leftovers in an airtight container in the refrigerator for up to 3 days. Allow to cool to room temperature before refrigerating.
Reheating
Reheat individual portions in a microwave-safe dish covered loosely with a lid or microwave-safe wrap until heated through. Alternatively, reheat in the oven at 175°C (350°F) covered with foil for 15-20 minutes, until warmed evenly.
