One step at a time

Let’s make it

  1. Preparation

Preheat your grill to medium-high heat, about 375°F (190°C).

  2. Burger

In a mixing bowl, combine the ground beef with salt, black pepper, and smoked paprika. Mix gently to combine without overworking the meat.

  3. Burger

Divide the seasoned beef into four equal portions and shape each into a 1-inch thick patty, making a shallow indentation in the center of each to prevent puffing during grilling.

  4. Cooking

Grill the patties for about 4-5 minutes on one side until nicely charred. Flip, then immediately top each patty with a slice of cheddar cheese. Grill another 4-5 minutes or until the internal temperature reaches 160°F (71°C) and cheese is melted.

  5. Buns

While the patties cook, brush the insides of the burger buns with olive oil and place on the grill, toasting for about 1-2 minutes until golden and warm.

  6. Sauce

Prepare the chipotle mayo by mixing the mayonnaise with finely chopped chipotle pepper and lime juice in a small bowl until smooth and well combined.

  7. Assembly

To assemble the burgers, spread chipotle mayo on both the toasted bun tops and bottoms. Place lettuce leaf on bottom buns, add the grilled cheeseburger patty, then top with tomato slices and optional red onion rings. Cap with the top bun.

  8. Serving

Serve immediately while hot, ideally with your favorite side like fries or coleslaw for a complete dinner.

A little kitchen wisdom

Tips & notes

Don’t over-mix the beef to keep the patties tender. Press a dimple in the center of each patty to prevent swelling in the middle. Let patties rest a few minutes after grilling for juicier burgers.

Saving it for later

Store leftover patties and sauce separately in airtight containers in the refrigerator for up to 3 days. Keep buns at room temperature or freeze for longer storage.

Reheating

Reheat patties gently in a skillet over low heat until warmed through to avoid drying out. Re-toast buns briefly on a skillet or toaster.
