Let’s make it

  1. Preparation

Preheat the oven to 180°C (350°F). Grease a 9x13 inch baking dish with butter or non-stick spray.

  2. Sweet Potato Preparation

Place peeled and chopped sweet potatoes in a large pot and cover with water. Bring to a boil and cook until tender when pierced with a fork, about 15-20 minutes. Drain well.

  3. Sweet Potato Preparation

Transfer the cooked sweet potatoes to a large bowl. Add granulated sugar, butter, milk, vanilla extract, and salt. Mash everything together until smooth and creamy.

  4. Assembly

Spread the mashed sweet potato mixture evenly into the prepared baking dish.

  5. Topping Assembly

In a small bowl, combine chopped pecans, brown sugar, and ground cinnamon. Sprinkle this mixture evenly over the sweet potatoes.

  6. Baking

Bake the casserole in the preheated oven for 20 minutes, until the topping is set and slightly browned.

  7. Marshmallow Topping

Remove the casserole from the oven. Evenly distribute mini marshmallows over the top.

  8. Final Baking

Return the casserole to the oven and bake for an additional 5-7 minutes, or until the marshmallows are golden brown and toasted. Watch carefully to prevent burning.

  9. Serving

Remove from oven and let stand for 5 minutes before serving warm as a delicious side dish.

A little kitchen wisdom

Tips & notes

Use fresh sweet potatoes and mash while still warm for the smoothest texture. Toast pecans lightly in a dry pan before adding to heighten flavor. Watch marshmallows closely during final bake to avoid burning them.

Saving it for later

Store leftovers covered in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat individual portions in the microwave until warmed through. For best texture, reheat in a preheated oven at 175°C (350°F) for 10-15 minutes until hot and marshmallows are soft again.
