Ingredients

Let’s make it
In a small bowl, sprinkle gelatin powder over 100 milliliters cold water to bloom. Set aside for 5 minutes.
In a blender, combine mixed berries, freshly squeezed lemon juice, remaining 150 milliliters water, and granulated sugar. Blend until smooth.
Pour the blended mixture through a fine mesh sieve into a saucepan to remove seeds and pulp. Add bloomed gelatin to the warm mixture and stir gently over low heat until the gelatin is fully dissolved, about 3 minutes. Do not boil.
Remove from heat and stir in finely chopped fresh mint leaves. Pour the mixture evenly into 6 serving glasses or molds.
Chill in the refrigerator for at least 4 hours or until set firmly.
Before serving, garnish each jelly with a sprig of fresh mint leaves.
Tips & notes
Make sure the gelatin is fully dissolved to ensure the jelly sets properly. For a smoother texture, strain the berry mixture carefully to remove all seeds. Fresh mint should be finely chopped to release aroma in the jelly.
Saving it for later
Store the jelly covered in the refrigerator for up to 3 days to maintain freshness and flavor.
Reheating
This dish is best served chilled and should not be reheated.
