Let’s make it

  1. In a medium saucepan, bring 3 cups of water to a boil. Add the steel-cut oats, reduce heat to low, and simmer uncovered for about 20 minutes, stirring occasionally.

  2. While oats are cooking, toast pumpkin and sunflower seeds in a dry skillet over medium heat, stirring frequently until golden and fragrant, about 3-5 minutes. Remove from heat and set aside.

  3. Add diced apple, ground cinnamon, and salt to the oats. Continue to cook for another 10 minutes, stirring often, until oats are tender and creamy and apples are softened.

  4. If desired, stir in brown sugar to taste to slightly sweeten the oatmeal. Remove from heat once oats and apples are fully cooked to an internal temperature of 160°F (71°C).

  5. Serve the oatmeal hot, topped with the toasted pumpkin and sunflower seeds for crunch. Add milk if desired for creaminess.

For even more flavor, soak the steel-cut oats overnight in the water and drain before cooking. Use any sweetener you like or omit altogether for a lower sugar option. Toast the seeds carefully to avoid burning for best texture.

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water or milk to loosen the oatmeal.

Reheat leftovers to 165°F (74°C) using a microwave or stovetop, stirring occasionally and adding a little milk or water to restore creaminess.
