Let’s make it
Preparation
Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
Vegetables
In a large bowl, combine the carrots, parsnips, sweet potatoes, and beets. Drizzle with olive oil, sprinkle salt and pepper to taste, and toss to coat evenly.
Roasting
Spread the vegetables evenly on the prepared baking sheet in a single layer to ensure even roasting.
Roasting
Roast in the preheated oven for about 30 minutes, stirring once halfway through to promote even cooking, until vegetables are tender and lightly caramelized at the edges.
Glaze
While vegetables roast, prepare the glaze by combining pure maple syrup, olive oil, and ground cinnamon (if using) in a small bowl. Whisk together until combined.
Finishing
Remove the vegetables from the oven and transfer them to a large mixing bowl. Pour the maple glaze over the hot vegetables and toss gently to coat all pieces evenly.
Finishing
Return the glazed vegetables to the baking sheet and roast for an additional 5-7 minutes, until the glaze is slightly sticky and caramelized.
Serving
Remove from oven and transfer to a serving dish. Garnish with fresh thyme leaves if desired and serve warm.
Tips & notes
For even cooking, cut all root vegetables into similar sized pieces. Use fresh maple syrup for the best flavor impact. Stir vegetables halfway through roasting to get crisp edges all around. Roast slightly longer if you prefer a deeper caramelization.
Saving it for later
Store leftover roasted root vegetables in an airtight container in the refrigerator for up to 3 days. Reheat gently to avoid drying out.
Reheating
Reheat leftovers in a 350°F (175°C) oven for 10-12 minutes until warmed through, or microwave on medium power covered until heated evenly. Add a light drizzle of olive oil when reheating to maintain moisture.
