Preheat your oven to 180°C (350°F). Prepare a baking dish to hold the apples.

Core the apples with a corer or sharp knife, making a hollow well in the center but leaving about 1 cm of apple at the bottom to hold filling. If desired, brush the apples with lemon juice to prevent browning.
Oat Crumble
In a mixing bowl, combine old-fashioned oats, chopped walnuts, brown sugar, ground cinnamon, and a pinch of salt.

Add cold unsalted butter cubes and vanilla extract to the dry ingredients. Use your fingers or a pastry cutter to rub the butter into the mixture until crumbly and well combined.

Stuff the hollowed apples generously with the oat and walnut crumble mixture, pressing slightly to pack it in.
Place the stuffed apples upright in the prepared baking dish. Bake in the preheated oven for 35–40 minutes, or until the apples are tender but still hold their shape and the crumble is golden brown.
Finishing Touch
Remove the baked apples carefully from the oven and let them cool for 5 minutes. Optional: drizzle with maple syrup before serving for extra sweetness.
Serve warm on their own or with vanilla ice cream or whipped cream if desired.

Use tart apples like Granny Smith or Honeycrisp for the best balance of sweet and tart flavors. For a crunchier crumble, chill the mixture before stuffing the apples. You can prepare the apples ahead and refrigerate before baking, adding extra 5 minutes to baking time.
Saving it for later
Store leftover baked apples covered in an airtight container in the refrigerator for up to 3 days. The crumble topping may soften over time.
Reheating
Reheat baked apples gently in a preheated oven at 160°C (320°F) for about 10-15 minutes until warmed through, or microwave individually for 1-2 minutes. Avoid overheating to prevent the apples from becoming too mushy.
