Let’s make it

  1. Preparation

    Preheat the oven to 190°C (375°F). Lightly grease a 9x13 inch baking dish with olive oil.

  2. Cooking Rice

    In a medium saucepan, bring 3 cups of water to a boil. Add the rinsed rice, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed and rice is tender. Remove from heat and let stand covered.

  3. Sauté Vegetables

    While the rice cooks, heat 2 tablespoons olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 4 minutes.

  4. Sauté Vegetables

    Add minced garlic, diced red and green bell peppers to the skillet. Cook, stirring often, until peppers begin to soften, about 5 minutes.

  5. Prepare Vegetable Mixture

    Add chopped tomatoes and broccoli florets to the skillet. Stir in dried oregano, dried basil, salt, and black pepper. Cook for 5 more minutes until vegetables are tender but still crisp.

  6. Assemble Casserole

    Combine the cooked rice and sautéed vegetable mixture in a large bowl. Mix well to evenly distribute vegetables and seasonings.

  7. Assemble Casserole

    Transfer the rice and vegetable mixture to the prepared baking dish. Spread evenly. Sprinkle grated cheddar cheese and parmesan cheese evenly over the top.

  8. Baking

    Bake uncovered in the preheated oven for 25–30 minutes or until the cheese is melted and bubbly with a light golden crust.

  9. Finishing

    Remove from oven and let the casserole rest for 5 minutes before serving to allow flavors to meld and casserole to set slightly.

A little kitchen wisdom

Tips & notes

Rinse the rice well before cooking to remove excess starch for fluffier results. You can substitute the cheddar with a sharp mozzarella for a milder cheese flavor. If preferred, add red pepper flakes for a hint of heat. Leftover casserole can be reheated and tastes even better the next day.

Saving it for later

Store any leftover casserole in an airtight container in the refrigerator within two hours of serving. It will keep well for up to 3 to 4 days.

Reheating

Reheat leftovers covered in a microwave-safe dish on medium power for 2–3 minutes or until heated through, stirring halfway. Alternatively, reheat in a 175°C (350°F) oven covered with foil for about 15 minutes until warmed evenly.
