Meanwhile, prepare the maple butter by combining the softened butter and maple syrup in a small bowl. Stir until well blended. Add salt to taste if desired, then set aside.

Pour 1/4 cup batter onto the skillet for each pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook until golden and cooked through, about 2 more minutes.

Saving it for later
Store leftover pancakes in an airtight container in the refrigerator for up to 3 days. Store maple butter separately in a small airtight container.
Reheating
Reheat pancakes in a hot skillet over low heat until warmed evenly. You can also microwave covered pancakes on medium power in short bursts until warm. For maple butter, let sit at room temperature to soften before spreading.
