Let’s make it

  1. Preparation

    Preheat the oven to 190°C (375°F). Grease a 9x13-inch baking dish with butter or nonstick spray.

    In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until softened, about 5 minutes. Add minced garlic and cook for 1 more minute until fragrant.

    Add chopped kale to the skillet and cook until wilted and tender, about 5-7 minutes. Season with salt and black pepper to taste. Remove from heat.

    In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to form a roux, stirring constantly.

    Gradually whisk in whole milk, continuing to stir until sauce thickens and is smooth, about 5 minutes. Remove from heat and stir in cream cheese, grated Gruyère cheese, ground nutmeg, salt, and black pepper to taste until fully combined and creamy.

    Layer half of the sliced sweet potatoes in the prepared baking dish. Spread the sautéed kale and onion mixture evenly over the potatoes.

    Add the remaining sweet potato slices over the kale layer. Pour the cheese sauce evenly over the top, ensuring it covers all layers.

  8. Baking

    Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake another 10-15 minutes until the top is golden and bubbly, and the sweet potatoes are tender when pierced with a fork.

A little kitchen wisdom

Tips & notes

To ensure tender sweet potatoes, slice them evenly about 1/8-inch thick. If kale stems feel tough, remove them completely before chopping. For a nutty flavor, substitute Gruyère with sharp cheddar if preferred.

Saving it for later

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave or reheat the entire dish covered with foil in a 175°C (350°F) oven until warmed through.

Reheat covered in a 175°C (350°F) oven for 15-20 minutes until hot and bubbly. Alternatively, microwave individual portions, stirring halfway through to ensure even heating.
