In a medium bowl, season the shrimp with ½ teaspoon salt, ¼ teaspoon black pepper, and paprika. Set aside.

Once grits have thickened, stir in the remaining 30 grams of butter, shredded cheddar cheese, remaining ½ teaspoon salt, and ¼ teaspoon black pepper. Adjust seasoning to taste.

Fold cooked shrimp gently into cheesy grits and warm through for 2 minutes over low heat.

Garnish with sliced green onions and chopped fresh parsley before serving.
