Preparation
Preheat the oven to 190°C (375°F). Lightly grease a 9x13 inch baking dish with butter.
Filling
In a large bowl, combine the peeled and sliced fresh peaches, half of the granulated sugar, ground cinnamon, cornstarch, and lemon juice. Toss gently until peaches are well coated.

Transfer the peach mixture to the prepared baking dish, spreading evenly.
Topping
In a separate bowl, whisk together the all-purpose flour, remaining granulated sugar, baking powder, and salt.

Cut the cold unsalted butter into the flour mixture using your fingers or a pastry cutter until the mixture resembles coarse crumbs.

Stir in the cold milk and vanilla extract until just combined; do not overmix. The batter will be somewhat thick.
Assembly
Drop spoonfuls of the batter evenly over the peaches in the baking dish, covering as much surface as possible. Sprinkle ground nutmeg over the top if using.

Bake in preheated oven for about 40-45 minutes, or until topping is golden brown and peaches are bubbling around the edges. A toothpick inserted into the topping should come out clean.
Serving
Remove from the oven and let the cobbler rest for about 10 minutes before serving to allow the filling to thicken slightly.
Tips & notes
Use ripe but firm peaches for the best texture and natural sweetness. Peeling peaches is easier if you blanch them briefly in boiling water for 30 seconds then transfer to ice water. Let the cobbler rest before serving so the filling thickens nicely and is less runny.
Saving it for later
Store leftover peach cobbler covered in an airtight container in the refrigerator for up to 3 days. Do not leave it at room temperature for more than 2 hours to ensure food safety.
Reheating
Reheat portions in a microwave-safe dish covered lightly with a damp paper towel for 1-2 minutes until warmed through. Alternatively, reheat in a 175°C (350°F) oven covered loosely with foil for 10-15 minutes. Add a splash of water if needed to restore moisture.
