Let’s make it
Preparation
Preheat your oven to 180°C (350°F). Lightly grease a 1.5-quart (about 1.4 liter) casserole dish with 1 tablespoon of butter.
Mixing
In a large mixing bowl, combine the corn kernels, softened cream cheese, half of the shredded cheddar cheese, granulated sugar, salt, black pepper, garlic powder, and paprika. Mix well until the cream cheese is fully incorporated and the mixture is creamy.
Mixing
Stir in the heavy cream to the corn mixture until evenly combined and creamy.
Assembly
Pour the creamed corn mixture into the prepared casserole dish and spread evenly.
Assembly
Sprinkle the remaining shredded cheddar cheese evenly on top of the casserole. Dot the surface with the remaining 1 tablespoon of butter, cut into small pieces.
Baking
Bake uncovered in the preheated oven for 30-35 minutes, or until the cheese is melted, bubbling, and golden brown on top.
Finishing
Remove from the oven and let the casserole rest for 5 minutes before serving. Garnish with chopped green onion if desired.
Tips & notes
Use fresh corn kernels when in season for the best flavor, but good-quality frozen corn works well too. For extra richness, substitute half of the heavy cream with whole milk. Keep an eye on the cheese topping during baking to avoid burning; tent with foil if browning too quickly.
Saving it for later
Store leftovers covered in an airtight container in the refrigerator for up to 3 days. Do not leave at room temperature for more than 2 hours after cooking.
Reheating
Reheat individual portions in the microwave until hot throughout, about 1-2 minutes, stirring halfway. Alternatively, reheat in a 175°C (350°F) oven, covered with foil, for about 15-20 minutes until warmed through.
