One step at a time

Let’s make it

  1. Preparation

Preheat oven to 220°C (425°F). Line a baking sheet with parchment paper or lightly grease it.

  2. Dough

In a large bowl, whisk together the sifted all-purpose flour, baking powder, baking soda, and salt until evenly mixed.

  3. Dough

Add the cold cubed unsalted butter to the flour mixture. Using a pastry cutter or your fingertips, cut the butter into the dry ingredients until the mixture resembles coarse crumbs with pea-sized pieces of butter.

  4. Dough

Fold in the grated sharp cheddar cheese and thinly sliced scallions until evenly distributed.

  5. Dough

Make a well in the center of the mixture and pour in the cold buttermilk. Stir gently with a wooden spoon or spatula just until the dough comes together; it will be slightly sticky but do not overmix.

  6. Shaping

Turn the dough out onto a lightly floured surface. Gently pat or roll the dough into a 20 cm (8-inch) square about 2.5 cm (1 inch) thick. Fold the dough in thirds like a letter, then gently pat down again to the same thickness. Repeat this folding process two times to create flaky layers.

  7. Shaping

Using a 6 cm (2.5-inch) biscuit cutter, cut biscuits from the dough, pressing straight down without twisting to ensure rise. Gather scraps gently, reshape, and cut remaining biscuits, making about 8 biscuits.

  8. Baking

Place biscuits on the prepared baking sheet about 2.5 cm (1 inch) apart. Bake in the preheated oven for 14 to 18 minutes or until golden brown and puffed.

  9. Honey Butter

While biscuits bake, combine softened unsalted butter and honey in a small bowl. Mix until smooth and creamy to prepare honey butter.

  10. Serving

Remove biscuits from oven and allow them to cool for 5 minutes. Serve warm accompanied by the honey butter spread.

A little kitchen wisdom

Tips & notes

Use cold butter and cold buttermilk for best flaky texture. Avoid overmixing the dough to keep biscuits tender. The folding step layers the dough for flakiness. Serve biscuits warm with honey butter for best flavor experience.

Saving it for later

Store cooled biscuits in an airtight container at room temperature for up to 2 days or refrigerate up to 4 days. To freeze, wrap tightly and store up to 1 month; thaw overnight in refrigerator before reheating.

Reheating

Reheat biscuits in a 175°C (350°F) oven for about 8-10 minutes until warmed through and slightly crisp on the outside. Alternatively, microwave covered for 20-30 seconds but texture may soften.
