Let’s make it

  1. Preparation

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.

  2. Sausage Preparation

Form the ground pork sausage into two thin patties about the diameter of the biscuit halves. Season both sides with salt and black pepper to taste.

  3. Cooking Sausage

Place the sausage patties on the prepared baking sheet. Bake for 12-15 minutes until cooked through and browned, flipping halfway through baking for even cooking.

  4. Egg Preparation

While the sausage bakes, whisk together eggs, whole milk, salt, and pepper in a bowl until smooth.

  5. Cooking Eggs

Heat a nonstick skillet over medium-low heat and melt the butter. Pour in the egg mixture and gently scramble, stirring occasionally until eggs are softly set but still moist, about 3-4 minutes.

  6. Biscuit Preparation

Split the buttermilk biscuits in half horizontally and place the bottoms on a clean baking sheet. Optionally, butter the biscuit tops lightly.

  7. Assembling Sandwich

When sausage patties are done, place one patty on each biscuit bottom. Top the sausage with scrambled eggs and a slice of cheddar cheese if using.

  8. Final Bake

Place the biscuit tops over the fillings. Return the sandwiches to the oven for 3-4 minutes to warm through and melt the cheese if added.

  9. Serving

Remove from oven and serve immediately, with hot sauce on the side if desired.

A little kitchen wisdom

Tips & notes

For fluffier scrambled eggs, cook them low and slow and remove from heat just before fully set; they will finish cooking in their own warmth. Use quality breakfast sausage for the best flavor. Warm biscuits by lightly toasting or a quick oven bake before assembling if desired.

Saving it for later

Store leftover sandwiches wrapped tightly in plastic wrap or foil in the refrigerator for up to 3 days. For best quality, reheat individually wrapped in a 350°F oven until warmed through, about 10-12 minutes.

Reheating

Reheat sandwiches in a preheated 350°F oven wrapped in foil for 10-12 minutes until heated through. Avoid microwaving to preserve biscuit texture. If microwaving, wrap in a paper towel and heat on medium power for 30-60 seconds, checking frequently.
