Southern-Style Breakfast Egg and Sausage Casserole with Cheddar

Preparation
Preheat oven to 180°C (350°F). Grease a 9x13 inch (23x33 cm) baking dish with butter.
Sausage Cooking
In a large skillet over medium heat, cook the breakfast sausage, breaking it up with a spatula, until fully cooked and browned, about 7 minutes. Remove sausage with a slotted spoon, leaving drippings in the skillet.
Vegetable Cooking
Add chopped yellow onion and minced garlic to the skillet with the sausage drippings. Sauté until onions are translucent and softened, about 4 minutes. Remove from heat.
Egg Mixture
In a large bowl, whisk together the eggs and whole milk until well combined. Stir in paprika, dried thyme, salt, and black pepper.
Combine Ingredients
Add the cooked sausage, sautéed onions and garlic, and 3/4 of the shredded cheddar cheese into the egg mixture. Stir gently to combine.
Assemble Casserole
Pour the mixture evenly into the prepared baking dish. Sprinkle the remaining cheddar cheese evenly on top.
Baking
Bake uncovered in the preheated oven for 30 to 35 minutes or until the casserole is set and the top is golden brown. A knife inserted into the center should come out clean.
Serving
Remove from oven and allow to rest for 5 minutes before serving. Garnish with chopped green onions if desired.
Tips & notes
Cook the sausage in advance and let it drain well to avoid excess grease in the casserole. Use sharp cheddar for a punchy flavor. Customize spices by adding a pinch of cayenne for some heat.
Saving it for later
Store leftover casserole covered in an airtight container in the refrigerator for up to 3 days. Do not leave out at room temperature for more than two hours.
Reheating
Reheat individual portions in the microwave for about 1 to 2 minutes until warmed through. Alternatively, reheat in a 175°C (350°F) oven covered with foil for 15 to 20 minutes.
