Let’s make it
Salad Base
Crumble the cornbread into a large mixing bowl, breaking it up into bite-sized pieces.
Vegetables
Add the diced cucumber, halved cherry tomatoes, finely chopped red onion, and sliced green onions (if using) to the bowl with the cornbread.
Herbs
Sprinkle in the chopped fresh cilantro (optional).
Toppings
Add the chopped crisp bacon to the bowl.
Dressing
Pour the ranch dressing over the salad ingredients and gently toss everything together until well combined.
Seasoning
Season with salt and black pepper to taste, then toss again lightly to distribute the seasoning evenly.
Serving
Refrigerate the salad for 10-15 minutes before serving to allow flavors to meld, or serve immediately chilled.
Tips & notes
Use day-old cornbread for better texture that holds up well in salad. Crisp bacon separately and chop just before adding to keep it crunchy. Toss gently to avoid breaking cornbread pieces too much.
Saving it for later
Store leftovers in an airtight container in the refrigerator and consume within 3 days. The cornbread may soften over time.
Reheating
This salad is best served chilled or at room temperature; reheating is not recommended as it may affect texture.
