Let’s make it
Preparation
Prepare the wild rice by rinsing it under cold water until the water runs clear. Drain well.
Cooking
In a skillet over medium heat, melt butter. Add diced onion and minced garlic, sauté until translucent and fragrant, about 4-5 minutes.
Cooking
Add sliced mushrooms to the skillet and sauté until they release moisture and begin to brown, about 6-8 minutes. Stir in chopped fresh thyme, salt, and black pepper to taste.
Assembly
Transfer the sautéed mushroom mixture to the slow cooker. Add the rinsed wild rice, chicken broth, and cream of mushroom soup. Stir to combine all ingredients evenly.
Cooking
Cover and cook on low for 3 to 4 hours, until the wild rice is tender and most of the liquid has been absorbed. Stir halfway through cooking if possible to ensure even cooking.
Finishing
About 10 minutes before serving, sprinkle shredded cheddar cheese on top, cover again and allow the cheese to melt.
Serving
Before serving, garnish with fresh chopped parsley for a bright, fresh flavor and appealing presentation.
Tips & notes
To enhance flavor, consider sautéing mushrooms in a mix of butter and olive oil. Stir the casserole once during slow cooking to prevent any rice from sticking at the bottom. Use good quality chicken broth for a richer taste.
Saving it for later
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently to preserve creaminess.
Reheating
Reheat individual portions in a microwave on medium power, covered, for 2-3 minutes until heated through. Alternatively, reheat on the stovetop over low heat, adding a splash of broth or water to loosen the casserole.
