    Drain and rinse the soaked pinto beans.

    Heat olive oil in a skillet over medium heat. Add diced onion and sauté until soft and translucent, about 5 minutes. Add minced garlic and cook for another 1 minute until fragrant.

    Transfer the sautéed onion and garlic to the slow cooker. Add the drained pinto beans, canned diced tomatoes with juice, chicken broth, smoked paprika, ground cumin, black pepper, salt, and cayenne pepper if using. Stir well to combine.

    Cover and cook on low for 7 to 8 hours or on high for 3 to 4 hours until the beans are tender and the stew has thickened.
