Quick & Easy Chicken and Broccoli Stir Fry

Preparation
Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat until hot.
Cooking
Add the cut chicken breasts to the skillet and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove chicken from skillet and set aside.
Flavor
In the same skillet, add the remaining 1 tablespoon oil and minced garlic. Sauté until fragrant, about 30 seconds.
Cooking
Add the broccoli florets to the skillet and stir-fry for about 3-4 minutes until they start to become tender but still crisp.
Combining
Return the cooked chicken to the skillet with the broccoli. Stir together.
Sauce
In a small bowl, mix soy sauce, water, and cornstarch slurry. Pour the sauce over the chicken and broccoli in the skillet. Stir and cook for 2-3 minutes more until sauce thickens and coats ingredients evenly.
Seasoning
Season with salt and black pepper to taste. Stir well and remove from heat.
Serving
Serve hot over steamed rice or noodles as desired.
Tips & notes
For extra flavor, marinate the chicken in a tablespoon of soy sauce and garlic for 10 minutes before cooking. Do not overcook the broccoli to keep it crisp and vibrant green.

Reheat in a skillet over medium heat until warmed through, adding a splash of water to loosen the sauce if necessary.
