Let’s make it

  1. Preparation

    Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium heat.

  2. Cooking Chicken

    Add chicken thighs and cook until browned on all sides, about 5-6 minutes. Remove and set aside.

  3. Cooking Sausage

    Add Andouille sausage slices to the same pot and cook until browned, about 3-4 minutes. Remove and set aside with chicken.

  4. Cooking Vegetables

    Add diced bell pepper, onion, celery, and garlic to the pot. Sauté over medium heat until vegetables are softened, about 5 minutes.

  5. Adding Okra

    Stir in sliced okra and cook for an additional 3 minutes until it begins to soften.

  6. Combining Ingredients

    Return chicken and sausage to the pot. Add rinsed rice, diced tomatoes with juices, chicken broth, Cajun seasoning, dried thyme, and bay leaf. Stir to combine.

  7. Simmering

    Bring the mixture to a boil. Reduce heat to low, cover pot, and simmer gently for 25-30 minutes until rice is tender and liquid is absorbed.

  8. Resting

    Remove pot from heat and let it rest, covered, for 5 minutes. Remove bay leaf.

  9. Finishing Touches

    Season with salt and black pepper to taste. Garnish with chopped fresh parsley before serving.
