Lemon Dill Roasted Salmon with Green Beans and Rice

Salmon
Preheat your oven to 200°C (400°F). Prepare a baking sheet with parchment paper or lightly grease it with olive oil.

In a small bowl, combine lemon juice, chopped fresh dill, and 1 tablespoon olive oil. Lay the salmon fillet on the prepared baking sheet, skin side down. Brush the lemon dill mixture evenly over the salmon, and season with salt and freshly ground black pepper to taste.

Place the salmon in the preheated oven and roast for about 18-20 minutes, or until the salmon reaches an internal temperature of 145°F (63°C) at the thickest part, and flakes easily with a fork.
Rice
While salmon is roasting, rinse the white rice under cold water until water runs clear. Combine rinsed rice and 360 milliliters water in a medium saucepan with a pinch of salt. Bring to a boil over medium-high heat.
Rice
Once boiling, reduce heat to low, cover, and simmer the rice for about 15 minutes, or until all water is absorbed and rice is tender. Remove from heat and let it rest covered for 5 minutes. Fluff with a fork before serving.
Green Beans
While the rice cooks, heat 1 tablespoon olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant, taking care not to burn it.
Green Beans
Add trimmed green beans to the skillet. Season with salt and freshly ground black pepper to taste. Sauté for about 8-10 minutes, stirring occasionally, until green beans are tender-crisp and bright green.
Serve the roasted salmon alongside the garlic sautéed green beans and fluffy white rice. Garnish with additional fresh dill or lemon wedges if desired. Enjoy your balanced, flavorful dinner!
Tips & notes
To ensure even cooking, choose salmon fillets of uniform thickness. Let salmon rest for 2 minutes after roasting for juicier texture. Rinse rice thoroughly before cooking to remove excess starch and prevent clumping. Adjust garlic amount in green beans according to preference.
Saving it for later
Refrigerate leftovers in an airtight container within 2 hours of cooking. Consume within 3-4 days. Rice and green beans freeze well, but texture of salmon may change if frozen.
Reheating
Reheat leftovers to 165°F (74°C) in an oven or microwave with a cover to maintain moisture. Reheat rice and green beans gently to avoid drying out. Avoid reheating salmon multiple times to preserve texture.
