Homestyle Baked Classic Apple Pie

Dough
Prepare the pie dough by combining 250 grams all-purpose flour and 1 teaspoon salt in a large bowl. Cut in 170 grams cold unsalted butter until the mixture resembles coarse crumbs.

Gradually add 60 milliliters cold ice water, stirring gently until the dough begins to come together. Form the dough into two equal discs, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.
Filling
Meanwhile, prepare the filling by tossing 6 peeled, cored, and sliced apples with 150 grams granulated sugar, 100 grams packed brown sugar, 2 teaspoons ground cinnamon, ½ teaspoon ground nutmeg, 1 tablespoon fresh lemon juice, and 1 tablespoon all-purpose flour until evenly coated.
Assembly
Preheat the oven to 425°F (220°C). Roll out one disc of chilled dough on a lightly floured surface into a 12-inch circle. Fit this into a 9-inch pie pan and trim the edges.
Assembly
Fill the pie crust with the apple mixture, mounding slightly in the center. Roll out the second dough disc into a 12-inch circle and cut into 1-inch wide strips for a lattice crust.

Arrange half of the strips lengthwise across the pie. Fold back every other strip, then lay one strip crosswise. Unfold the strips and weave the folded strips over and under the crosswise strip to form a lattice.
Finishing
Trim excess dough from strips and crimp all edges to seal. Brush the lattice crust with 1 beaten egg and sprinkle with coarse sugar if desired.
Cooking
Bake at 425°F (220°C) for 15 minutes. Reduce heat to 350°F (175°C), and continue baking for 35 minutes or until apples are tender and crust is golden brown. If edges brown too quickly, cover edges with foil.
Serving
Remove pie from oven and allow to cool on a wire rack for at least 2 hours to let the filling set before serving.
Tips & notes
For best results, use tart apples such as Granny Smith or Honeycrisp for balanced sweetness and texture. Chill the dough thoroughly to ensure a flaky crust. Use a sharp knife for lattice strips and cover crust edges with foil if they brown too fast.
Saving it for later
Store leftover pie covered loosely at room temperature up to 2 days, or refrigerate in an airtight container for up to 4 days. Do not freeze after baking as the crust texture may deteriorate.
Reheating
Reheat individual slices in a 350°F (175°C) oven for about 10 minutes until warmed through. Avoid microwaving to keep crust crisp.
