Let’s make it

  1. Burger

    In a large bowl, combine ground turkey, 1 minced garlic clove, chopped parsley, thyme leaves, olive oil, half the salt and pepper. Mix gently but thoroughly to combine without overworking the meat.

    Divide the mixture into 4 equal portions and shape each into a patty about 3/4 inch thick. Place patties on a plate and refrigerate to firm up for 10 minutes while preparing the grill and aioli.

    In a small bowl, combine mayonnaise, the remaining minced garlic clove, lemon juice, and the rest of the salt and pepper. Stir well to make the garlic aioli. Cover and refrigerate until ready to serve.

    Preheat grill to medium-high heat and oil the grates lightly to prevent sticking.

    Grill the turkey patties for approximately 5-6 minutes per side or until internal temperature reaches 165°F (74°C) and patties are cooked through with nice grill marks. Avoid pressing down on patties while grilling to maintain juiciness.

Tips & notes

Do not overmix the turkey mixture to keep burgers tender. Let patties rest chilled before grilling so they hold together better. Use a meat thermometer to ensure the turkey is fully cooked but not dry. For juicier results, optionally add 1 tablespoon of finely grated onion to the meat mixture. Garlic aioli can be made ahead and refrigerated.

Saving it for later

Store leftover turkey burgers in an airtight container in the refrigerator for up to 3 days. Keep aioli separate in a covered container. Do not leave turkey patties at room temperature for more than 2 hours.

Reheating

Reheat cooked turkey burgers gently on a medium skillet or grill for 2-3 minutes per side until heated through, or microwave covered for 1-2 minutes. Avoid overcooking to prevent drying. Reheat aioli separately at room temperature or add fresh before serving.
