Grilled Herb-Marinated Chicken Skewers with Garlic Butter

Chicken Skewers
Cut chicken breasts into 1-inch cubes and place them in a large bowl.
Marinade
In a separate bowl, combine olive oil, lemon juice, minced garlic, chopped thyme, rosemary, salt, and black pepper to create the marinade.

Pour the marinade over the chicken pieces, toss well to coat evenly. Cover and refrigerate for 20 minutes to allow flavors to develop.
Garlic Butter
While the chicken is marinating, prepare the garlic butter by mixing softened butter with minced garlic and finely chopped parsley. Set aside.

Thread the marinated chicken pieces onto the soaked wooden skewers evenly, leaving a little space between pieces for even cooking.
Cooking
Preheat the grill to medium-high heat. Place the chicken skewers on the grill and cook for about 12–15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

In the last 2 minutes of grilling, generously brush the garlic butter over the chicken skewers, allowing it to melt and infuse flavor.
Serving
Remove the skewers from the grill and let them rest for 3–5 minutes before serving warm.
Tips & notes
For best results, soak wooden skewers in water for at least 30 minutes prior to grilling to prevent burning. Use fresh herbs for the marinade to maximize flavor. Let the chicken rest briefly after grilling to retain juices.
Saving it for later
Store leftover grilled chicken skewers in an airtight container in the refrigerator and consume within 3 days. The garlic butter can be refrigerated separately in a small container for up to 1 week.
Reheating
Reheat leftover chicken skewers gently in a preheated oven at 350°F (175°C) for about 10 minutes, or until warmed through. Avoid overheating to prevent drying out. Adding a small amount of water or extra garlic butter before reheating can help retain moisture.
