Let’s make it
Preparation
Preheat your grill to medium heat (about 350°F or 175°C). Prepare a large sheet of heavy-duty aluminum foil by folding it several times to create a flat, sturdy surface large enough for your waffles.
Batter
In a large mixing bowl, whisk together the sifted all-purpose flour, baking powder, baking soda, salt, and granulated sugar until well combined.
Batter
In a separate bowl, beat the eggs lightly, then whisk in the buttermilk, melted butter, and vanilla extract (if using) until smooth.
Batter
Pour the wet ingredients into the dry ingredients, gently mixing until just combined; avoid overmixing to keep the waffles fluffy. A few lumps are okay.
Grilling
Lightly grease the prepared aluminum foil with melted butter to prevent sticking. Pour about 1/3 cup (80 ml) of batter per waffle onto the foil, shaping it slightly with the back of a spoon if desired.
Grilling
Place the foil with batter on the preheated grill and close the lid. Grill the waffles for 4-5 minutes on one side until bubbles form and the underside turns golden brown.
Grilling
Carefully flip the foil with the waffles and grill the other side for an additional 3-4 minutes until golden and cooked through.
Grilling
Remove the waffles from the grill carefully using a spatula. Repeat the process for the remaining batter, greasing the foil each time.
Serving
Serve the grilled buttermilk waffles warm with your favorite Southern toppings such as maple syrup, fresh berries, or whipped cream.
Tips & notes
Ensure the grill is properly preheated and the foil is well greased to prevent sticking. Avoid overmixing the batter to keep waffles light and fluffy. Use a sturdy aluminum foil base to simulate a waffle iron on the grill. Serve immediately or keep warm in a low oven.
Saving it for later
Store leftover waffles in an airtight container in the refrigerator for up to 3 days. To freeze, place waffles between parchment paper in a freezer-safe bag for up to 1 month.
Reheating
Reheat waffles on a grill or toaster oven until warmed through and crisp, about 2-3 minutes per side. Avoid microwave reheating to preserve texture.
