  1. In a blender, combine the chopped strawberries, cooked white rice, almond milk, sweetened condensed milk, ground cinnamon, and vanilla extract. Blend on high until smooth and creamy.

  2. Taste the mixture and adjust sweetness if needed by adding more condensed milk or a bit of sugar, blending briefly to combine.

  3. Strain the strawberry horchata through a fine mesh sieve or cheesecloth into a pitcher to remove rice and strawberry solids for a smoother texture, pressing gently to extract maximum liquid.

  4. Chill the strained horchata in the refrigerator for at least 10 minutes to enhance the flavors and serve cold.

  5. Serve the strawberry horchata over a glass filled with ice cubes. Garnish with fresh mint leaves and a slice of strawberry if desired.

Tips & notes

For a richer texture, use whole milk instead of almond milk. To make it vegan, substitute sweetened condensed milk with coconut condensed milk or maple syrup for sweetness. Always chill the horchata well before serving to enjoy maximum flavor and refreshment.

Saving it for later

Store leftover strawberry horchata in a sealed container in the refrigerator for up to 2 days. Stir well before serving as the solids may settle.
