One step at a time

Let’s make it

  1. Peanut Butter Mixture

In a mixing bowl, combine the creamy peanut butter, softened unsalted butter, powdered sugar, vanilla extract, and a pinch of salt if using. Mix thoroughly until smooth and well blended.

  2. Peanut Butter Mixture

Roll the peanut butter mixture into 1-inch balls and place them on a parchment-lined baking sheet. Refrigerate the balls for at least 30 minutes to firm up before dipping.

  3. Chocolate Coating

While the peanut butter balls chill, melt the semisweet chocolate chips and vegetable oil in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth.

  4. Chocolate Coating

Using a fork or toothpick, dip each peanut butter ball into the melted chocolate, leaving a small circle of peanut butter visible on top to resemble a buckeye nut. Place dipped candies back onto the parchment-lined sheet.

  5. Chocolate Coating

Refrigerate the dipped candies for at least 1 hour or until the chocolate is fully set. Store the candies chilled and serve cold for the best texture and flavor.

A little kitchen wisdom

Tips & notes

Allow the peanut butter balls to chill thoroughly before dipping to ensure they hold their shape. If the chocolate is too thick for dipping, add a bit more vegetable oil, a teaspoon at a time, to thin it out. Use a toothpick to dip and place the candy on parchment paper for easier handling.

Saving it for later

Store chilled in an airtight container in the refrigerator for up to 2 weeks. For longer storage, freeze in a single layer on parchment paper, then transfer to freezer-safe containers for up to 3 months.

Reheating

No reheating needed. Serve chilled straight from the refrigerator. If frozen, thaw in the refrigerator for several hours before serving.
