Let’s make it
Preheat the oven to 200°C (400°F).
Beef Mixture
In a large skillet over medium heat, add the ground beef. Cook, breaking it apart, until browned and cooked through, about 5-7 minutes.
Beef Mixture
Drain excess fat from the skillet. Add the taco seasoning and water to the beef. Stir well and simmer for 3-4 minutes until the sauce thickens.
Assembly
On a large baking sheet or ovenproof dish, spread half of the tortilla chips evenly. Sprinkle half of the shredded cheddar and Monterey Jack cheeses over the chips.
Assembly
Distribute half of the seasoned ground beef evenly over the cheese layer. Add half the black beans and jalapeño slices (if using) on top.
Assembly
Repeat layering with the remaining tortilla chips, cheeses, ground beef, black beans, and jalapeño slices.
Assembly
Drizzle the warm queso cheese sauce evenly over the top layer of nachos.
Assembly
Place the baking sheet or dish in the preheated oven and bake for 8-10 minutes, until the cheese has melted and the nachos are hot throughout.
Toppings
Remove from oven and top with diced tomatoes, sour cream, sliced green onions, and chopped cilantro as desired before serving.
Tips & notes
Use good quality tortilla chips to avoid sogginess. Warm your queso sauce slightly for a smooth drizzle over the nachos. Customize toppings based on preference, and add fresh lime juice for extra brightness.
Saving it for later
Store leftover nachos and toppings separately in airtight containers in the refrigerator. Use within 3 days for best quality.
Reheating
Reheat leftovers in the oven at 175°C (350°F) for 8-10 minutes until heated through to maintain crispness. Avoid microwaving to prevent sogginess.
