Let’s make it

  1. Preparation

Preheat your oven to 190°C (375°F). Grease a 9x13 inch baking dish with butter or non-stick spray.

  2. Filling

In a large mixing bowl, combine the peeled and sliced peaches with 150 grams granulated sugar, lemon juice, cinnamon, nutmeg, and 1 tablespoon all-purpose flour. Toss gently to coat the peaches evenly.

  3. Filling

Pour the peach mixture into the prepared baking dish. Drizzle 2 tablespoons of melted butter evenly over the filling.

  4. Topping

In a medium bowl, whisk together 1½ cups all-purpose flour, baking powder, ½ cup granulated sugar, and ½ teaspoon salt for the topping dough.

  5. Topping

Stir in ¾ cup whole milk and 1 teaspoon vanilla extract (optional) into the dry topping ingredients until just combined. Do not overmix; the batter will be thick.

  6. Assembly

Drop spoonfuls of the topping batter evenly over the peach filling to partially cover the surface. It’s fine if some peaches remain visible.

  7. Assembly

Dot the remaining 2 tablespoons of melted butter over the topping batter. Optionally, sprinkle granulated sugar on top for a crunchy crust.

  8. Baking

Bake uncovered for 40-45 minutes until the topping is golden brown and the peach filling is bubbly. A toothpick inserted in the topping should come out clean.

  9. Serving

Remove from the oven and let the cobbler rest for 10 minutes before serving. Enjoy warm by itself, or with vanilla ice cream or whipped cream if desired.

A little kitchen wisdom

Tips & notes

For the best peach flavor, use ripe but firm peaches. You can substitute frozen peaches (thawed and drained) if fresh are unavailable. Don’t overmix the topping batter to keep it tender. If you like a more textured crust, sprinkle sugar on top before baking.

Saving it for later

Store leftover peach cobbler covered in an airtight container in the refrigerator for up to 3 days. The topping may soften but flavors will deepen.

Reheating

Reheat individual portions in the microwave for 1-2 minutes or until warmed through, or place in a preheated oven at 175°C (350°F) for about 10 minutes. Add a little water or cover loosely with foil to prevent drying.
