  1. Preparation

    Preheat the oven to 200°C (392°F) with the rack in the middle position.

  2. Marinade

    In a small bowl, whisk together lemon juice, 2 tablespoons olive oil, minced garlic, chopped thyme, chopped rosemary, salt, and black pepper to create the marinade.

  3. Marinade

    Pat chicken thighs dry with paper towels and place them in a baking dish. Pour the marinade over the chicken, turning to coat evenly. Let marinate for 10 minutes at room temperature.

  4. Roasted Vegetables

    Meanwhile, toss carrots and zucchini with 1 tablespoon olive oil and ½ teaspoon salt on a baking sheet.

    Arrange the marinated chicken thighs skin-side up on one side of a baking tray. Place the vegetables on the other side, ensuring everything is in a single layer.

  6. Cooking

    Bake in the preheated oven for 35 minutes, or until the chicken reaches an internal temperature of 74°C (165°F) and the skin is golden and crisp. Stir the vegetables halfway through cooking for even roasting.

  7. Serving

    Remove from oven and let chicken rest for 3 minutes before serving. Serve chicken thighs alongside the roasted vegetables.
