  1. Pimento Cheese

    Prepare the pimento cheese by mixing shredded cheddar cheese, softened cream cheese, mayonnaise, diced pimentos, garlic powder, onion powder, and cayenne pepper in a bowl until smooth and even. Set aside.

  2. Tomatoes

    Slice each green tomato into approximately 1/2 inch thick slices. Lightly season each side with salt and black pepper.

  3. Assembly

    Spread a generous spoonful of the prepared pimento cheese onto half of the tomato slices. Top each with another tomato slice to form sandwiches, pressing lightly to adhere.

  4. Breading

    Set up a breading station with three shallow dishes: one with all-purpose flour, one with beaten eggs, and one with panko breadcrumbs.

    Dredge each stuffed tomato sandwich first in flour, shaking off the excess, then dip in the beaten egg, and finally coat thoroughly with panko breadcrumbs.

  6. Frying

    Heat canola oil in a deep skillet over medium heat to about 175°C (350°F). Carefully place the breaded tomato sandwiches in the hot oil in batches, frying each side until golden brown and crispy, about 3-4 minutes per side.

  7. Serving

    Use a slotted spoon to transfer the fried green tomato sandwiches to a paper towel-lined plate to drain excess oil. Let rest briefly before serving.
