    Rinse the catfish fillets under cold water and pat them dry with paper towels. Place the fillets in a shallow dish and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Pour the buttermilk over the fish to coat completely. Cover and refrigerate for 15 minutes to marinate.

    Pour the vegetable oil into a large heavy skillet to a depth of about 1 inch. Heat over medium-high heat until hot but not smoking, about 5 minutes. To test, drop a little coating into the oil; it should sizzle immediately.
