Let’s make it
Cooking
Heat olive oil in a large skillet over medium heat. Add sliced andouille sausage and cook until browned and slightly crispy, about 5 minutes. Remove sausage and set aside.
Cooking
In the same skillet, add diced onion, green bell pepper, and celery. Sauté until vegetables are softened and fragrant, about 5 minutes.
Cooking
Add minced garlic, Cajun seasoning, and smoked paprika to the skillet. Stir and cook for an additional 1 minute until spices are aromatic.
Cooking
Return the cooked andouille sausage to the skillet. Stir to combine with the sautéed vegetables and spices.
Cooking
Add uncooked rice to the skillet and stir well to coat the rice with the oils and spices. Then pour in chicken broth. Bring to a boil over medium-high heat.
Cooking
Once boiling, reduce heat to low, cover skillet, and simmer for 18-20 minutes or until rice is tender and liquid is absorbed. Avoid lifting the lid during cooking.
Cooking
Remove skillet from heat and let it rest, covered, for 5 minutes to steam the rice fully.
Serving
Fluff the rice with a fork. Season with salt and black pepper to taste. Garnish with chopped fresh parsley before serving.
Tips & notes
Use a tight-fitting lid to ensure the rice cooks evenly and absorbs all the flavors. For a lower sodium version, use low-sodium chicken broth and adjust salt later. Resting the rice after cooking helps it achieve a fluffy texture perfect for serving.
Saving it for later
Store leftovers in an airtight container in the refrigerator within 2 hours of cooking. Consume within 3 to 4 days.
Reheating
Reheat in a skillet over medium heat with a splash of water or chicken broth to maintain moisture. Stir occasionally until warmed through. Alternatively, microwave covered on medium power, stirring halfway through.
