  1. In a mixing bowl, combine the cooked lobster meat, mayonnaise, lemon juice, and finely chopped celery. Gently fold together to combine without breaking up the lobster pieces.

  2. Add fresh chives to the lobster mixture if using. Season the mixture with salt and freshly ground black pepper to taste. Mix gently again.

  3. Preheat a skillet over medium heat. Lightly butter the outside of each hot dog bun.

  4. Place the buns, buttered side down, on the hot skillet. Toast until golden brown and crisp, about 1-2 minutes.

  5. Remove the buns from the skillet. Optionally, line each bun with a butter lettuce leaf.

  6. Generously fill each toasted bun with the lobster mixture. Serve immediately for a fresh, classic New England lobster roll experience.
