Classic Fried Chicken Thighs with Spicy Rub

Preparation
Rinse and pat dry the chicken thighs with paper towels, then set aside.
Spicy Rub Preparation
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, 1 teaspoon salt, and black pepper to create the spicy rub.
Apply Rub
Rub the spicy mixture evenly over all sides of the chicken thighs. Let them rest for 10 minutes at room temperature to absorb the flavors.
Dredging
In a shallow dish, combine all-purpose flour with the remaining 1/2 teaspoon salt. Dredge each chicken thigh in the flour mixture, coating thoroughly and shaking off excess.
Heat Oil
Heat vegetable oil in a heavy-bottomed skillet over medium heat until it reaches 175°C (350°F), or until a small amount of flour sizzles immediately when added.
Frying
Carefully place the floured chicken thighs skin-side down into the hot oil without crowding the pan. Fry for about 10 minutes on the first side, until golden and crispy.
Frying
Flip the chicken and continue frying for another 10-12 minutes, or until the internal temperature reaches 74°C (165°F) and the chicken is cooked through with a crispy crust.
Resting
Remove the fried chicken thighs and drain on a wire rack set over a baking sheet or paper towels. Let rest for 5 minutes before serving.
Tips & notes
Use fresh chicken thighs with skin on for best flavor and crispiness. Maintain oil temperature steady for even cooking. Let chicken rest after frying to retain juiciness.
Saving it for later
Store leftover fried chicken in an airtight container in the refrigerator for up to 3 days. Do not leave at room temperature for more than 2 hours.
Reheating
Reheat fried chicken in a 190°C (375°F) oven for 10-15 minutes until heated through and crispy again. Avoid microwave reheating to keep crust crisp.
