Let’s make it
Preparation
Preheat your oven to 190°C (375°F). Line two baking sheets with parchment paper and set aside.
Dough
In a medium bowl, whisk together all-purpose flour, baking soda, and salt until combined.
Dough
In a large bowl, beat the softened unsalted butter with granulated sugar and light brown sugar until creamy and smooth, about 2-3 minutes.
Dough
Add the vanilla extract and the large egg to the butter mixture and beat until well incorporated.
Dough
Gradually blend in the dry flour mixture, mixing just until no flour streaks remain. Avoid overmixing to maintain tender cookies.
Dough
Fold in the semisweet chocolate chips evenly throughout the dough.
Baking
Drop heaping tablespoon-sized balls of dough about 2 inches apart onto the prepared baking sheets to allow for spreading.
Baking
Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden but the centers remain soft.
Cooling
Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Tips & notes
Be careful not to overmix the dough once you add the flour to keep the cookies tender. For thicker cookies, chill the dough for 30 minutes before baking. Use parchment paper for easy cleanup and even baking.
Saving it for later
Store cooled cookies in an airtight container at room temperature for up to 4 days. They can also be frozen in a sealed container for up to 3 months; thaw at room temperature before serving.
Reheating
Reheat cookies in a preheated oven at 150°C (300°F) for about 5 minutes to soften and refresh their texture. Avoid microwaving as it may make them chewy or rubbery.
