Classic Caesar Salad with Homemade Dressing

Wash and chop the romaine lettuce into bite-sized pieces and place in a large salad bowl.

In a separate bowl, combine the pasteurized egg yolk, freshly squeezed lemon juice, Worcestershire sauce, minced garlic, and Dijon mustard.

Slowly whisk in the olive oil to the egg mixture until the dressing is smooth and emulsified. Season with salt and black pepper to taste.
Pour the dressing over the chopped romaine lettuce and toss gently to coat evenly.
Add the grated Parmesan cheese and croutons on top, and toss lightly again to combine.
