Classic Beef Stroganoff with Mushrooms and Egg Noodles

For the best texture, slice the beef sirloin against the grain into thin strips. Do not overcook the beef to keep it tender. Use full-fat sour cream for a rich and creamy sauce. If you prefer, substitute white mushrooms with cremini for a deeper flavor. Stir the sour cream in off the heat to prevent curdling.
