Classic Red Velvet Cake

Preparation
Preheat the oven to 175°C (350°F). Grease and flour two 8-inch round cake pans, or line them with parchment paper for easier removal.

In a large mixing bowl, beat granulated sugar and vegetable oil until well combined. Add eggs one at a time, beating well after each addition. Then stir in red food coloring, vanilla extract, and white vinegar.

Assembly
Once cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of frosting over the top. Place the second cake layer over the frosting and spread frosting evenly on top and sides of the cake.
Finishing
Refrigerate the assembled cake for at least 30 minutes before serving to allow the frosting to set slightly.
