Let’s make it
Soup
Heat olive oil in a medium saucepan over medium heat. Add the finely chopped onion and minced garlic. Sauté until onions are translucent, about 5 minutes.
Soup
Add canned tomatoes with their juice and vegetable broth to the saucepan. Stir to combine and bring the mixture to a simmer. Cook for 10 minutes to meld flavors.
Soup
Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer to a blender and puree, then return to saucepan.
Soup
Season the soup with sugar, salt, and freshly ground black pepper to taste. Keep warm on low heat while preparing sandwiches.
Sandwich
Butter one side of each bread slice. Place one slice, buttered side down, on a skillet preheated over medium heat. Layer cheddar cheese evenly on top, then cover with the other slice of bread, buttered side up.
Sandwich
Grill the sandwich until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Use a spatula to press gently and flip carefully.
Slice the grilled cheese sandwich in half diagonally. Ladle the warm tomato soup into bowls and garnish with fresh basil leaves if desired. Serve together immediately.
Tips & notes
Use good quality bread and sharp cheddar cheese for best flavor. For a creamier soup, stir in a splash of cream before serving. To avoid burning the sandwich, grill on medium heat and be patient for melted cheese.
Saving it for later
Store leftover soup in an airtight container in the refrigerator for up to 3 days. Refrigerate the sandwich wrapped tightly in foil or plastic wrap for up to 1 day; reheating is best fresh but possible.
Reheating
Reheat soup gently on the stove or microwave until piping hot, stirring occasionally. Reheat grilled cheese sandwich in a skillet over low heat or in an oven at 350°F (175°C) until warmed through to maintain crispiness.
