Let’s make it
Preparation
Preheat oven to 180°C (350°F). Grease a 9x13-inch baking dish lightly with butter or nonstick spray.
Cooking
In a large skillet over medium heat, melt butter. Add chopped yellow onion and minced garlic; sauté until soft and translucent, about 5 minutes.
Cooking
Add breakfast sausage to the skillet. Cook, breaking into small pieces with a spatula, until browned and cooked through about 7–8 minutes. Drain excess fat if needed. Remove from heat.
Mixing
In a large mixing bowl, whisk together the beaten eggs, milk, salt, and black pepper.
Assembly
Add cubed bread, cooked sausage mixture, and shredded cheddar cheese to the egg mixture. Stir gently until all ingredients are combined and bread is coated.
Baking
Transfer the mixture into the greased baking dish, spreading evenly. Cover with foil and bake in preheated oven for 25 minutes.
Baking
Remove foil and bake uncovered for an additional 10 to 15 minutes, or until the top is golden brown and the casserole is set in the center (a knife inserted should come out clean).
Serving
Remove from oven and let rest for 10 minutes before serving. Garnish with chopped fresh parsley if desired.
Tips & notes
Use day-old or slightly dry bread for the best texture as it soaks up the egg mixture without becoming mushy. You can prepare this casserole in advance and refrigerate overnight before baking. Substitute cheddar with Monterey Jack or pepper jack cheese for a different flavor profile.
Saving it for later
Store leftovers in an airtight container in the refrigerator for up to 3 days. Do not freeze the casserole as the bread may become soggy upon thawing.
Reheating
Reheat individual portions in the microwave for 1 to 2 minutes until heated through, or warm in a preheated 175°C (350°F) oven for about 10 minutes covered with foil to prevent drying out.
