  1. Preparation

    Preheat your oven to 200°C (400°F).

    Boil the peeled and quartered potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.

    While potatoes cook, heat butter in a large skillet over medium heat. Add the chopped onion and diced carrot; sauté until softened, about 5 minutes.

Use lean ground beef to reduce excess grease. For a richer flavor, add a splash of cream to the mashed potatoes. To speed up preparation, use leftover mashed potatoes if available.

Saving it for later

Refrigerate leftovers in an airtight container within 2 hours. Consume within 3-4 days. This dish can be frozen for up to 2 months; thaw overnight in the refrigerator before reheating.

Reheating

Reheat individual portions in the microwave covered with a microwave-safe lid or wrap until hot throughout, about 2-3 minutes, stirring halfway if possible. Alternatively, reheat in a 175°C (350°F) oven covered with foil for 15-20 minutes until warmed through.
