Let’s make it

  1. Preparation

    Preheat your oven to 180°C (350°F). Butter a 22x33 cm (9x13 inch) baking dish.

  2. Pasta Cooking

    Bring a large pot of salted water to a boil. Cook the macaroni pasta until just al dente, about 6-7 minutes. Drain and set aside.

  3. Cheese Sauce

    In a large saucepan over medium heat, melt the butter. Whisk in the flour and cook, whisking constantly, for about 2 minutes to form a roux, without browning.

  4. Cheese Sauce

    Slowly pour in the milk while whisking continuously to prevent lumps. Cook for 5-7 minutes until the sauce thickens and coats the back of a spoon.

  5. Cheese Sauce

    Remove from heat. Stir in the grated cheddar, grated parmesan, mustard powder (if using), salt and freshly ground black pepper to taste until smooth and creamy.

  6. Assembly

    Add the drained macaroni to the cheese sauce and stir gently to combine evenly.

  7. Topping

    Pour the macaroni and cheese mixture into the prepared baking dish. Sprinkle the breadcrumbs evenly over the top. Optionally, sprinkle paprika for color and flavor.

  8. Baking

    Bake in the preheated oven for 25-30 minutes until bubbling and the topping is golden brown and crisp.

  9. Serving

    Remove from oven and let rest for 5-10 minutes before serving for best texture and flavor.

Tips & notes

For a richer flavor, use a blend of sharp cheddar and aged parmesan cheeses. Toast the breadcrumbs lightly in butter before topping for extra crunch. Avoid overcooking pasta initially as it will continue cooking in the oven.

Saving it for later

Store leftovers in an airtight container in the refrigerator within 2 hours. Consume within 3-4 days for best quality. Do not freeze as texture may degrade.

Reheating

Reheat in the oven at 180°C (350°F) for about 15-20 minutes until warmed through and bubbly. Cover with foil if topping browns too quickly.
