Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
Filling
In a large bowl, toss the sliced apples with granulated sugar, 1 teaspoon ground cinnamon, lemon juice, and vanilla extract if using. Set aside.

Transfer the apple mixture evenly into the prepared baking dish.

In another bowl, combine the oats, all-purpose flour, brown sugar, ½ teaspoon ground cinnamon, and salt for the topping.

Add the cold cubed butter to the oat mixture. Using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.
Sprinkle the oat topping evenly over the apple filling in the baking dish.
Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the apples are bubbly and tender when pierced with a fork.
Remove from oven and let cool for at least 10 minutes before serving warm. Optional: Serve with vanilla ice cream or whipped cream.

Use tart apples like Granny Smith or Honeycrisp for the best flavor and texture. To make the topping crunchier, chill it before baking. If using frozen apples, thaw and drain excess liquid first to avoid soggy crisp.
Saving it for later
Store leftover apple crisp covered in the refrigerator for up to 3 days. For longer storage, the crisp topping and apple filling can be frozen separately for up to 2 months; thaw before reheating.
Reheating
Reheat apple crisp in a preheated oven at 350°F (175°C) for 15-20 minutes until warmed through and the topping regains its crispness. Microwave reheating is possible but may soften the topping.
