Let’s make it

  1. Preparation

    Preheat your oven to 375°F (190°C). Heat olive oil in a large cast iron skillet over medium-high heat.

  2. Chicken Preparation

    Season chicken thighs with 1 teaspoon salt, ½ teaspoon black pepper, and paprika on both sides. Place skin-side down in the hot skillet and sear until golden and crispy, about 5 minutes per side. Remove chicken from skillet and set aside. Keep skillet with rendered fat and juices.

  3. Vegetable Preparation

    Add diced onion and minced garlic to the skillet. Sauté over medium heat until onions are translucent and fragrant, about 4 minutes. Stir in corn kernels and cook for another 2 minutes. Season lightly with remaining salt and pepper.

  4. Cornbread Batter Preparation

    In a medium bowl, whisk together cornmeal, flour, baking powder, sugar (if using), remaining salt and pepper. In a separate bowl, whisk chicken broth, melted butter, and the egg until combined. Pour wet ingredients into dry and mix until just combined — do not overmix.

  5. Assembly

    Carefully place the seared chicken thighs back into the skillet nestling them among the sautéed vegetables. Pour the cornbread batter evenly over the chicken and vegetables, spreading gently to cover.

  6. Baking

    Transfer skillet to the oven and bake for 25-30 minutes until the cornbread is golden brown and a toothpick inserted in the center comes out clean. The chicken should reach an internal temperature of at least 165°F (74°C).

  7. Finishing

    Remove from oven and let rest for 5 minutes before serving. This helps the cornbread set and flavors meld.
