Let’s make it

  1. Preheat the air fryer to 375°F (190°C) for about 5 minutes.

  2. Stuffing

    In a medium bowl, combine pimento cheese, chopped spinach, and softened cream cheese until mixed well.

  3. Using a sharp knife, carefully butterfly each chicken breast by slicing horizontally without cutting all the way through, creating a pocket.

  4. Seasoning

    Season the inside and outside of each chicken breast evenly with garlic powder, paprika, salt, and black pepper.

  5. Stuffing

    Stuff each chicken breast pocket generously with the pimento cheese and spinach mixture, then secure the opening with toothpicks if desired to prevent filling from spilling during cooking.

  6. Finishing

    Brush the outside of each stuffed chicken breast with olive oil to help crisp the exterior in the air fryer.

  7. Place the stuffed chicken breasts in a single layer in the air fryer basket, ensuring they do not overlap.

  8. Cook in the air fryer at 375°F (190°C) for 18–20 minutes, turning halfway through the cooking time, until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.

  9. Remove chicken breasts from the air fryer and let rest for 5 minutes before serving to allow juices to redistribute and filling to set slightly.

Butterflying the chicken breasts carefully is key to creating a pocket without splitting them open. Use softened cream cheese for easier mixing with pimento cheese and spinach.
