Let’s make it
Pie Crust
Prepare the pie crust by mixing the all-purpose flour, salt, and sugar in a large bowl. Cut in the cold cubed butter using a pastry blender or fingertips until mixture resembles coarse crumbs.
Pie Crust
Drizzle the ice water gradually, mixing gently with a fork until dough just comes together. Do not overmix. Form the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
Filling
Preheat oven to 375°F (190°C). In a large bowl, toss sliced apples with granulated sugar, brown sugar, ground cinnamon, nutmeg, lemon juice, and cornstarch until well coated.
Pie Crust
Roll out one dough disc on a lightly floured surface into a 12-inch circle. Carefully transfer to a 9-inch pie dish, pressing to fit and leaving overhang.
Filling
Pour the apple filling evenly into the bottom crust.
Pie Crust
Roll out the second dough disc into a 12-inch circle. Use a sharp knife or a pastry wheel to cut into 1-inch wide strips.
Pie Crust
Create a lattice top by laying half of the strips horizontally across the pie, spaced evenly. Fold back every other strip halfway, place one vertical strip, then unfold strips. Repeat folding and placing strips to complete the lattice.
Pie Crust
Trim excess dough from edges and pinch to seal the lattice to the bottom crust. Crimp edges decoratively.
Topping
Brush the lattice and edges with beaten egg and sprinkle with granulated sugar to enhance browning and sparkle.
Baking
Bake in preheated oven for 50 to 60 minutes until the crust is golden and the filling is bubbly. If edges brown too quickly, shield with foil.
Serving
Remove from oven and let cool on a wire rack for at least 2 hours before slicing to allow filling to set properly.
Tips & notes
Use a mix of tart and sweet apples for best flavor. Keep ingredients and utensils cold for the flakiest crust. Let the pie cool fully to prevent runny filling.
Saving it for later
Store leftover pie covered loosely at room temperature for up to 2 days or refrigerated up to 4 days. Reheat slices in a warm oven to refresh crust.
Reheating
Reheat pie slices in a 350°F (175°C) oven for 10-15 minutes until warmed through. Avoid microwave reheating to keep crust crisp.
